A true jewel of the Centre-Loire vineyards, the terroir of Menetou-Salon is unique. A resurgence of the secondary school, its Kimmeridgian clay-limestone constitution is called "Oreille de Poule" (chicken's ear), due to the shape of its agglomerates of small fossilised oyster shells.
Cradle of the Sauvignon Blanc grape variety, the terroir/climate alliance is also remarkable for Pinot Noir.
Techniques are evolving but it is still the hand of man who shapes the soil.
Many of our vines are old, a guarantee of regularity in the quality of our wines. In order to preserve this ancestral genetic heritage, we have carried out a massal selection on Sauvignon vines over 80 years old. This work allows us, today, to establish our new plantations with the same diversity.
